Vanilla Earl Grey

Vanilla Earl Grey Crème Brûlée indulgence. Where silky vanilla custard meets the floral notes of Earl Grey tea, finished with a golden caramel crust. A timeless dessert with a modern twist.

Ingredients: 2 cups heavy cream, 1 Earl Grey tea bag, 1 vanilla bean, 5 egg yolks, 1/3 cup sugar, pinch of salt.

Method: Infuse cream with Earl Grey tea and vanilla, whisk egg yolks, sugar and salt until smooth, slowly add warm cream to yolk mixture, pour into ramekins and bake in a water bath at 160°C for 40 mins, chill for 2 hours until set, sprinkle sugar and torch to create the caramel top.
